I have been away enjoying the Summer and time with family. I am back and kicking up some much needed healthy eating habits . This one is a definite keeper!
2 lemons, freshly squeezed
1/3 cup olive oil
1 tsp sea salt
1/2 tsp ground black pepper
4 boneless/skinless chicken breasts
6 pieces of Romaine lettuce
2 large carrots, grated
1 tbsp store bought Peanut Sauce
In a medium bowl, whisk together lemon juice, olive oil, salt and pepper to make marinade.
Place chicken breasts in a 9 x 13 inch baking dish, then pour marinade over chicken and refrigerate. Tip: I do this first thing in the morning so it is ready when I get home from work.
Heat grill and cook chicken breasts for 10 minutes on each side until cooked through.
Carrot French Fries Recipe:
1 lb bag of large carrots
1 tbsp olive oil
Goya Adobo seasoning
Salt and pepper
Preheat oven 350 degrees. Cut the carrots into fries and place all ingredients in a plastic bag then shake away. Lay parchment paper on a cookie sheet and evenly distribute carrots. Bake for 20 mins.
Cut chicken diagonally into slices then place the chicken on Romaine lettuce. Top with your Carrot French fries and dab on a bit of peanut sauce. Serve hot.
