I have been assigned at my current location for well over 3.5 years and have given them my blood, sweat and tears! Part of my new look on life was to take care of me and my beautiful Mini Me! This meant not opening a case file or checking a military related email on the VPN this weekend. It called for some much needed and well over due “family time” with food, fun, drinks and music. I am watching my diet and choosing healthier options and try not to pass 1200 calories a day. Eating more protein, fruits and veggies. Drinking less alcohol and consuming more water. Tonight’s BBQ consisted of mashed cauliflower and garlic, lean bacon wrapped green peppers, onion and chicken, guacamole with lime chips, a saketini and strawberry/lemon water. BACON WRAPPED CHICKEN:
Begin this tasty treat by marinating chicken breast, bacon, bell peppers, and onions in McCormick’s Mesquite Marinade for a few hours or overnight for a more intense flavor. Cut your chicken into strips cutting short ways along the breast. Wrap two pieces of chicken and a few pieces of peppers and onions in the bacon and stick with a toothpick. Grill for about thirty (30) minutes or until bacon is crispy and chicken is done.
Why waste quality time? Mini Me and I took the opportunity to squeeze in a few games of Uno while the chicken cooked. Poor girl, one day she will be a champion Uno player like her mother 😉 ! To tell the truth she did win a game or maybe two!! Well done Mini Me!!
To fully enjoy this beautiful day and great weekend, I had to mix up something delicious I had a recent trip the the Hibachi grill. The Saketini contains a shot of vodka, Apple Pucker, Sake, and pineapple juice, and dressed with a cherry. Add contents into a shaker with ice, shake and serve in martini glasses. I add a touch of lemon juice and let the fun begin!!
While chilling with the Saketini and Uno games we snacked on some homemade guacamole. This wonderful mix includes onion, jalapeño peppers, cilantro, avocados, cilantro, tomatoes, and a touch of fresh lime juice. I love to make mine in a mortar set providing that authentic touch. Delish!!
We tried something new tonight! Cauliflower mashed potatoes! But wait, there are no potatoes, so wouldn’t it be mashed cauliflower? Either way it was the bomb! Start by cutting up a head of cauliflower and steaming it a steamer for about ten minutes or until the florets are soft with four to five cloves of freshly pressed garlic. Then put these into a food processor with two tablespoons of butter and two tablespoons of olive oil (EVOO) and puree till smooth. Season with salt, pepper, and ground nutmeg to taste.
It’s time to chow down! Mini Me wasted no time diving in and I was not far behind her. With a beautiful night, great company, water with lemons and strawberries, and a tasty Saketini, it was about to go down!

It was a great weekend and now as we wind down to bed time, I praise God every day for a wonderful daughter, a secure job, and good health. I look forward to this new found enthusiasm behind healthy eating, working out, and being fit, fun, and healthy!
