Christmas Casserole

I woke up this morning and decided to make something super easy for breakfast.  I chose to make Christmas dinner on Christmas Day this year.  Normally, I do it the night before and we have left overs the following day.  This year, Mini Me is with her Daddy so I switched it up.

This recipe is so easy and you can choose to add in whatever ingredients you like.

What’s in it?

5-6 eggs (go for cage free, vegetarian fed – no beak-less chickens here!)

1/4 cup of milk

16 oz refrigerated breakfast biscuits (the Pillsbury flakey kind)

1/4 cup of chopped red onion

1 chopped tomato

3 slices of pepper jack cheese (diced up)

Salt and Pepper to taste

Half a pack of turkey bacon (sliced into smaller strips and cooked)

11×17 pan, coated with a light layer of butter to prevent sticking

Recipe:

1.  Mix eggs, tomato, onion, and milk in a bowl and add in your diced cheese.  Cut each biscuit into fours and add them to the bowl then let it sit.  Cook your bacon and set aside.

2.  Pour your biscuit mixture into the buttered baking dish then top it with the cooked bacon.

3.  Bake in a 350 degree oven for approximately 25-30 minutes.  Making sure your eggs are completely cooked.

4.  Serve and enjoy!
