Feast to Celebrate the Birth of Christ

WOW! What an amazing day.  The only thing missing is Mini Me.  I didn’t plan on cooking a huge meal but after mass yesterday I couldn’t help but take in what the Father said and decided to cook in celebration of the meaning behind today.

I think I went a little over board!  I want to thank my BFF JDubs.  I thank him for all he has done for us.  I am grateful for his friendship and continued support!  God bless you!  Thanks for grilling the turkey too! 😉

Here is a rundown of what was on the menu:

Using the following ingredients for garlic, red pepper, green beans.

1.  Boil the green beans for about 5-6 minutes.  Then drain and immediately place them in ice water to stop the cooking process.

2.  Mince three cloves of garlic and cook in extra virgin olive oil over medium heat.

3.  Then add the red pepper flakes and reheat.  Serve immediately!

Cut up one sweet potato into squares and place in a bag with 1 table spoon of olive oil, season with cinnamon, brown sugar, dash of salt, and a dash of nutmeg.  Bake in the oven on 350 degrees for about 25 minutes.  Now add marshmallows and bake until they are golden brown.

MAN!  What a feast!  I am grateful for having such a blessed life.  As I reflect on all the wonderful things around me…people, family, friends, a home, food on the table, all that I ever wanted….I say THANK you to GOD and hope to continue to bring joy to others in all that I am.

For those who are in harms way, I pray for your safe keeping!  For those less fortunate than most, I pray for strength and guidance to assist you in your time of need!  For those who have too much, may your eyes be open to kindness and compassion to help others who are in need!
