Ahhh… F-words never looked so good! 2014 is starting off well. Keeping me engaged and on my toes. I am staying motivated, focused, and positive. Tonight, we are having one of my favorite mother-daughter duo’s over for a peaceful, meditation, and relaxation dinner party. A perfect way to start off the new year. As usual, life happens and she is running a tad behind, so this was a great time for me to post this. I absolutely love hosting events. I am very detail oriented and aim to ensure my guests are treated special. Like family!
So, I polished the silver, cleaned the crystal, and set a fun and relaxed table for a fruit, prosciutto and cheese appetizer, stuffed shells, and garlic bread dinner. For dessert….sweet apple pie a’ la mode!
Stuffed shells recipe:
Cook 1 lb of ground beef, drain, and place in large bowl
8 oz of Ricotta Cheese
1/2 bag of Italian mixed cheese
1/2 cup of fresh diced cilantro
1/4 cup of fresh diced mint
1/2 box of large shells, boiled at the ready
Make fresh pasta sauce if you have time (I didn’t today, so Barilla it was)
In the large bowl of meat, combine the Italian cheeses, Ricotta, cilantro, and mint. Fold together till mixed. In a large cooked shell, fill with about a tablespoon or so of the meat mix.
In a large oven safe dish, cover the bottom with a light layer of pasta sauce then place the shells in with space around them. Place a dollop of sauce on top of the shells and a sprinkle of mozzarella cheese. Cover with foil and cook in the oven at 400 degrees for 30 minutes.
When done, place a light layer of warm sauce on a plate, put the shells on top of the sauce, place a dollop of sauce on top of the shells, some fresh grated parmesan cheese, and a few leaves of cilantro for garnish.
