I am trying to eat healthier which means cutting out a lot of the bad foods. Today I had thawed out ground beef so I decided to make a quick chili. I literally grabbed what I had in the pantry and placed it all in a pot. I let the concoction simmer all day so I would have it ready for my after workout meal (dinner). Here is what I did.
I browned about a pound of ground meat in a skillet with (dash of…) cumin, cinnamon, sugar (2 packs of truvia), celery salt, chili powder, and chili pepper flakes. I moved the cooked meat into a pot with one can of diced tomatoes, one can of tomato paste, and two cans of unsalted tomato sauce. Next, I added a little butter to the skillet to sauté red onion, garlic, green pepper, cilantro, and parsley. I added the veggies to the pot of meat then placed the whole thing on simmer for about 6 hours and stirred it occasionally.
Let me tell you, it was the perfect end to a long day! So easy and everything I wanted it to be! YUM! Enjoy!
