I am lucky to have all my family together on this day of remembrance! I couldn’t help but treat them to a lovely family brunch of chicken and waffles.
This is a slightly different twist to your momma’s recipe. Check it out!
First pre-heat your oven to 405 degrees.
What you need:
- 3-4 cups Veggie chips
- 1/4 cup coconut pieces
- 3 sweetner packets
- 1 tsp cayenne pepper (or more if you want a nice kick)
- 1/4 cup pecans
Take these ingredients and blend well in a food processor for your bread crumbs.
- 2 large chicken breasts cut into bites size cubes
- sugar free syrup
Dip the chicken in the syrup then cover in your homemade bread crumbs. Place the chicken on a baking rack and bake at 405 degrees for 15 mins.
Meanwhile, use your favorite waffle mix and make 2-3 large waffles. Then, cut the waffles slightly larger than the size you cut your chicken pieces. Place your chicken on top of your waffles and drizzle with hot syrup. Top with fresh or dried chives and enjoy!
