Healthy Turkey Sloppy Joe

So, as some of you may know, my legs have caused some issues with my fitness lately.  I have been on a running hiatus until they can figure out what the heck is going on with my circulation and the numbness.  Anyway, the no running has caused me to pack on a bit more weight.  Recently I have switched to T25 (with the low impact option) and Shakeology.  I have also changed my eating habits and the combo has resulted in me dropping 2 pant sizes after 3 wks.  SWEET!  Well, I wanted to share tonight’s dinner.  Homemade Turkey sloppy Joe lettuce wraps.  Oh my goodness it was surprisingly amazing.

Here’s what you will need:

1 tablespoon coconut

1 pound ground turkey

1/2 onion, chopped

1 clove garlic, chopped

1 8-ounce can tomato sauce

3 tbsp dark brown sugar

3 tbsp cup barbecue sauce (I used Rudy’s BBQ…YUM)

1 tablespoon Worcestershire sauce

pinch of kosher salt and black pepper

1 tbsp red wine vinegar

Adobo seasoning

Lettuce scoops

Directions:
1. In a large skillet, heat the oil over medium-high heat. Add the turkey, onion, and garlic, breaking the meat up with a spoon, cook until browned about 3 to 5 minutes. Season with salt, pepper, and Adobo.

2. Mix the tomato sauce, sugar, barbecue sauce, and Worcestershire into the turkey mixture; season with ½ teaspoon salt and ¼ teaspoon pepper. Reduce heat and simmer until thickened, 3 to 5 minutes.

Spoon mixture into the lettuce scoops and serve promptly.
